Recipe: Corn Flakes Cookies

You can get cookies on websites, but I really prefer cookies you can eat! Here’s the recipe to my favourite cookies, they’re very easy to make and are DELICIOUS!

I can’t remember where I got the recipe, but it was originally for oat cookies, but I prefer them made with Corn flakes – or for extra yumminess, try using Crunchy Nut Corn flakes!


Ingredients (makes 20)

  • 170g (6oz) Margarine or Butter
  • 115g (4oz) Caster Sugar
  • 1 Teaspoon Vanilla Extract (optional but a nice extra)
  • 225g (8oz) Self-Raising Flour (or normal/ap flour with a teaspoon of baking powder)
  • 57g (2oz) Corn flakes

I often half the recipe and it works just as well…

Method

Preparation Time: 15 minutes | Cooking Time: 15 minutes

Preheat the oven to 180C / 350F / Gas 4.

Cream together the margarine/butter and sugar until it’s light and fluffy.

Add the vanilla essence (optional).

Sieve in the flour (it works pretty well without the sieving to be honest, but all good recipes sieve the flour don’t they…).

Mix in the Corn flakes.

Knead the mixture together – make sure to crunch up the Corn flakes well!

Divide the mixture into and roll into small balls. I find it works out to about 1oz (29/30g) per cookie.

Place the balls/cookies on a greased or non-stick baking tray. (For thicker cookies, like the ones in the photo, keep them as balls; for thinner cookies, flatten the balls slightly.)

Bake for about 15/20 minutes until light golden brown.

Allow them to cool for a few minutes on the tray before placing on a cooling rack. If stored in an air tight container, they will keep for a good week.

Try not to eat them all at once!
